Dobermann and GSD both are good to go. I don't anitcipate any problem with the two breeds. Make sure you get the two dogs neutered after they are 6 month old.

It is always wise to keep one male and one female if you want to have two dogs, keeping two males or keeping two females also possible but there might be a problem in dominance and you need to spend more time on this, instead go for one male and one female, they live happily together.

All dogs guard their owner and their property is on treat but the breeds like gsd, rottie, dobe, pitbull has a higher figthing drive, so you need to train them for guarding purpose. With Lab I feel GSD do best as Navjot said, make sure you should get neutered if planning for two males, as there is 90% chance of getting dominant issues.
